Pumpkin Pie Parfait

As the weather gets colder, and the leaves turn all shades of yellows, oranges, and reds, people tend to get in the mood for pumpkin-type treats. That, and the ingredients become easier to find, and more readily available in stores. A go-to dessert is often pumpkin pie. Although this beloved sweet is wonderful to eat, it can be an inconvenient recipe, especially if you’re making the dough for the crust from scratch. So, if you’re in the mood for a quick-and-easy pumpkin pie, this recipe is for you!

These pumpkin pie parfaits were very simple  to make (recipe provided by Ideas For The Home). The ingredients were easily acquired, and although no specific measurements were provided, none were really needed. You first prepare the “pie filling” layer by adding vanilla pudding, pumpkin puree, and all the pie spices to your heart’s desire. Afterward, you crush vanilla Oreos for your “pie crust” layer. You can leave in the cream filling, or scoop it out, it all depends on preference. If you do leave the cream in, your “pie crust” may end up a little chunkier than if you were to remove it. From there, you layer the pudding mixture, the crushed Oreos, and spoonfuls of whipped topping in a cup, or a jar if you really want to get into the aesthetic of the recipe.

The result turned out to be absolutely amazing. It took a lot of testing and tweaking to get the spice-pumpkin-pudding ratio correct, but after that everything went smoothly. The dessert essentially tasted like a cup of pumpkin pie! So, if you’re ever in the mood for a pumpkin-themed-dessert, this is a quick and easy recipe to try. But be quick! The time for chocolate and peppermint is right around the corner.
