Peanut Butter Ice Cream

When you go to the store and pass by the ice cream section, there is no doubt that you’ll find a variety of flavors named in countless ways to attract a potential customer’s eye. Among those general flavors, perhaps you’ll see a few odd flavors from Ben and Jerry’s or Jeni’s Ice Cream, who are both notorious with their odd but delicious flavor combinations. This week, I cooked up a nostalgic combination at home, inspired by Ugne Bubnaityte’s ice cream roll from the Great British Bake Off. You guessed it, the dessert for this week is Peanut Butter and Jelly Ice Cream.

Now, the original recipe was made with normal dairy products, however, the recipe was slightly altered to make it lactose free. Coconut milk is a highly recommended substitution for making lactose free ice cream. If you want to substitute the heavy cream, you’d want to use coconut whipping cream. As for materials needed to make the anticipated icy treat, keep in mind that you will need an ice cream maker to churn the mixture. This can be found at Walmart, and Amazon. Other than the slight hassle of gathering the milk-alternatives, the rest of the materials are easy to find in your local grocery store. As for the steps for making the ice cream, remember that this is a long process, especially if you’d like it to turn out well. There are two parts to this ice-cream recipe: the first is making the peanut butter ice cream base, and the second is assembling the layers of the base and the jelly stripes.

This might all sound like a lot of work, but it isn’t any harder than making and frosting a cake! It was very easy to make, and the peanut butter base alone could be a fantastic ice cream. The jelly gives a wonderful taste, and honestly does remind me of a peanut butter and jelly sandwich. To bring this dessert to the next level (and a tribute to Ugne’s bake), try a scoop with a brownie. The combination of flavors is fantastic.

Despite the fact that the cold seems to be clinging to the end of the winter season, this dessert can be enjoyed anytime, and you can warm your house by baking the brownies. If you don’t want to go through the hassle of making this ice cream, or simply don’t have the materials, have no fear! Ben and Jerry’s has a wonderful peanut butter ice cream that you can top with jelly at home. Overall, the outcome of this recipe was absolutely worth the wait and tasted great.
